And yes, that does impact value. Not nearly as much as you seem to think it does.
In your mind NJD would somehow think:
"Meier is willing to sign with us so we get him for 9 years at an 8.15 mill AAV, but he's only willing to sign with 5 other teams so we'll take our offer down a few 1sts"
And Florida thought:
"well we'd be getting a 100 point superstar for 8 years at 9.5 million, but there's only 3 other teams bidding so we'll risk missing out on him and take our offer down a few 1sts"

NJD was willing to go up to Simon Nemec for 8 years of Matthew Tkachuk at 9.5 mill AAV
NJD will have a price they'll be willing to go up to for Brady Tkachuk at 8.2 mill
Other bidders doesn't make any individual team increase the max price they'll offer. It simply increases the likelihood that a team has a higher max price.
And once you get to 2 bidders, it will be a bidding war regardless. 2 bidders is still a bidding war
4 bidders willing to pay 2 million dollars for a house is better than 20 bidders willing to pay 1 million dollars for a house.
